Lentil Quiche

  • 1 cup chopped organic onion
  • 2 tablespoons olive oil
  • 1/2 cup dried lentils
  • 1 cups water
  • 1 cup organic chicken broth
  • 2 cups broccoli florets
  • 1 cup chopped organic, fresh tomatoes
  • 4 organic eggs, beaten
  • 1 cup organic milk
  • 1 teaspoon sea salt
  • Dash of cayenne pepper (optional)
  • 1/2 cup shredded organic Mozzarella cheese
  • 1/2 cup mushrooms (optional)

Lentil Quiche

  1. Preheat the oven to 375 degrees F (190 degrees C). Place
the onion and olive oil into a 9 inch deep-dish pie plate. Bake for
about 15 minutes, or until onion is tender.
  2. Place the lentils and water into a saucepan, and bring to a
boil. Cook for about 20 minutes, or until lentils are tender. Drain
most of the water off, then place the broccoli florets on top of the
lentils. Cover and cook for about 5 minutes. This will dry the lentils,
    and cook the broccoli.
  3. Transfer the lentils, broccoli and tomatoes to the pie
plate with the onions, and stir to evenly distribute each item. Stir in
cheese at this time if using. In a medium bowl, whisk together the
eggs, milk, sea salt, and cayenne pepper. Pour over the ingredients in
    the pie plate.
  4. Bake for 45 minutes in the preheated oven, or until the
center is firm when the quiche is jiggled. Cool for a few minutes
    before slicing and serving.

 Angel King

A native of North Carolina, Angel grew up in Rockingham County where she enjoyed life as a pastor’s kid. Her family served the local community and later the Native American families in the state of Oklahoma. At age 17, her family returned to NC after her mother was diagnosed with cancer. The witness of her parents’ committed life of service fostered her own desire to help others through avenues of faith and health.

Angel has always had an interest in health and wellness, particularly nutrition. As a teenager this interest soon became a great passion after losing her mom to cancer. Over the years, this life-changing experience propelled her to do many hours of research while becoming an advocate for health and wellness.

Angel is pictured here with Dr. T. Colin Campbell at the local premiere of the nutritional documentary, Forks Over Knives.

Along with her degree in Radiology, Angel has her certification in Plant-Based Nutrition from Cornell University. She studied with Dr. T. Colin Campbell, noted nutritional biochemist and author of the book, The China Study. She has 15+ years’ experience in the healthcare industry.

Angel desires to help others, especially women and children, as they set their own health and wellness goals. She continues to read the latest studies on cancer and the effectiveness of targeted nutrition as it relates to preventable diseases. She recently served as a contributing author to Transformation’s latest book, The Organic Transformation, 60 Days to a New You. She is now in the process of getting her certification in Quantum Reflex Analysis, analysis based on scientific principles of kinesiology, human physiology and quantum cellular resonance. This clinically proven and reliable method of assessment will allow her to quickly pinpoint problem areas and determine the precise nutrients needed to rapidly restore health to a particular area of concern.

Angel’s compassion for those in need has given her the desire to create a unique non-profit organization to assist those experiencing crises. She plans to implement the vision for this new Triangle-area based ministry within the next year. The mission for this charity will be to practically bridge the gap for those clients and caregivers dealing with physical illnesses and subsequent hardships.

Angel lives in Zebulon with her husband, Rich and their two children, Christin and Justin.
