Chunky Guacamole
- 2 very ripe avocados
- 2 Tbsp. onion, chopped
- 1 clove garlic, minced
- 1/2 red pepper, cut fine
- 1/2 green pepper, cut fine
- 1 medium ripe tomato, peeled and chopped
- 2 stalks celery, chopped fine
- 1 Tbsp. lime or lemon juice

Directions:
- Halve the avocados, remove pits and scoop flesh into a glass container.
- Mash with a fork and blend in remaining ingredients.
- Serve as quickly as possible. Serve w/ fresh veggies.
